Khaman Dhokla   

is one of the staple food of Gujarat, khaman is made from fresh soaked chana dal or gram flour. It is very soft and fluffy and easy to make. As a south Indian who eats spicy food, when I first tasted a khaman dhokla the taste was very unique and not like any other south Indian comfort food, when i had it for 2nd time and more the taste became addictive.

Today i will be showing instant preparation method of khaman dhokla, you can taste sweetness, sourness, spice and savory from this single dish. The main step in the preparation of this recipe is the addition of fruit salt / ENO. Addition of fruit salt gives aeration to the batter that results in soft and fluffy khaman dhokla.

Once the dhokla is prepared it is important to add proper tempering, the prepared dhoklas are dry so it will be difficult to gulp, so tempered water is added to it to ease swallowing. It is best when eaten as it is or with green chutney or any chutney of your choice.

Ingredients
  

Batter

  • 1 Cup Gram Flour Sieved
  • 1 Tbsp Ginger & Green Chili paste (1 inch ginger & 1 green chilly)
  • 1 Tsp Salt adjust as per taste
  • 1 Tsp Sugar
  • 1 Tsp Lemon juice
  • 1 Tbsp Oil
  • 3/4 Cup Water
  • 1 Packet ENO (natural flavor) 5 g
  • 1 Tsp oil for greasing the bowl

Tempering

  • 1 Tbsp Oil
  • 1/2 Tsp Mustard Seeds
  • 1/4 Tsp Salt
  • 1/4 Tsp Sugar
  • 10 -12 Curry Leaves
  • 1/4 Cup Water plus extra 2 tbsp
  • Corainder & Grated Coconut for garnishing

Instructions
 

  • Grease a microwave safe bowl(any shape is ok, it will be better if it is a square bowl) uniformly with oil and keep aside. Set the microwave power to 70%.
  • In a mixing bowl add ingredients mentioned under batter expect for ENO and mix well without any lumps. Now add ENO, mix well until you see the batter puff up.
  • Immediately transfer the batter to greased bowl, place it in the microwave and cook for 5 minutes.
  • After 5 minutes check the batter by piercing toothpick into it, if it comes out clean then dhokla is ready. Or else cook for other 1 to 2 min and check in between.
  • Remove the bowl from microwave, run a knife along the edges of the bowl and transfer the dhokla onto a plate.
  • In a pan heat oil for tempering, add mustard seeds and let splutter. Then add curry leaves and fry them lastly add water, salt, sugar and bring water to a boil.
  • Switch off the flame and slowly add the tempered water to dhokla with a spoon and spread uniformly. Prick some holes into the dhokla using a toothpick so that the water will be absorbed easily.

  • Finally garnish with coriander and freshly grated coconut. You can have this immediately or wait for 10 min so that the water is completely absorbed by the dhokla.
  • Cut the khaman into small pieces and serve it with green chutney.
