Saggubiyyam payasam/ sago kheer/ sabudana kheer/ Javvarisi Payasam

Be it any festival or devotional gatherings Saggubiyam Payasam is one of the most liked and prepared dessert in south India. It is sweet pudding made out of tapioca sago or saggubiyyam and milk. Very easy to prepare, it needs just 10 minutes to cook. The recipe today is for a creamy and rich payasam, by adding more water the payasam can be of thin and drinking consistency.

Apart from making it as an offering to god, the payasam is frequently made during summer because of its cooling effect on body. Be it a child or an adult, anyone can eat it so that it helps to maintain the temperature of the body.

 

Saggubiyyam Payasam

Ingredients
  

  • 1/2 Cup Saggubiyyam
  • 2 Cups Milk
  • 1/2 Cup Sugar
  • 3/4 Cup Water
  • Few Cashews
  • 1 Tbsp Ghee
  • 1 Nos Green Cardamom

Instructions
 

  • Soak saggubiyyam in water for 2 hours or until saggubiyyam soaks all the water and fluff up.
  • In a vessel add milk, sugar, crushed cardamom and bring it to a boil.
  • Add soaked saggubiyyam to the milk along with water and cook for 5 minutes on medium flame.
  • In a separate pan, add ghee and let heat. Add cashews and fry them until golden brown
  • switch off the flame under payasam, add the cashews along with ghee and serve it hot or cold.

Notes

If you like the payasam to be thin, add 1/2 cup water more to the milk and then cook it.
