Ingredients
  

  • 1 Cup Bombay Rava or Sooji
  • 1 Heaped Cup Sugar
  • 3 Cups Water
  • 1/2 Cup Desi Ghee / Clarified Butter
  • 2 Crushed Elaichi / green cardamom
  • Few Nuts and raisins (optional)
  • Few drops orange food coloring / saffron threads (optional)

Instructions
 

  • In a pan add 1/2 cup ghee and let heat. Add nuts, raisins and fry till golden brown. Once fried remove them from ghee and keep aside.
  • Add rava to the remaining ghee and cook on a medium flame till it turns to a light golden brown color. keep stirring in between to avoid burning of the rava. It takes 4 – 5 minutes for this process
  • Add elaichi, sugar and cook for 1 minute
  • Add water, food coloring/saffron and mix well. Turn the heat to low and cook the kesari for 2 – 3 minutes until all the water is absorbed.
  • Finally add fried nuts, raisins and mix well, switch off the flame and serve hot or cold.
